I had some buckwheat flour kicking round from after I had my elimination eating regimen and went gluten-free for some time, and determined to strive my hand at some buckwheat waffles.

Makes Three-Four Giant Waffles

 

INGREDIENTS:

  
– Three/Four cup buckwheat flour
– Three/Four cup brown rice flour (or entire wheat if you happen to do not care about it being gluten-free)
– 1 tbsp protein powder
– 2 tsp chia seeds
– 1 tbsp coconut sugar
– 1 1/Four tsp baking powder
– Three/Four tsp baking soda
– 1/Four tsp high-quality sea salt
– 1 tsp cinnamon
– 2 tbsp melted coconut oil
– 1 1/Four cups of dairy-free milk
– 1 tbsp apple cider vinegar
– 1 tsp vanilla extract
– 1 tbsp floor flax seeds

Toppings (elective):
– berries
– banana
– nut butter
– maple syrup
– coconut yogurt

INSTRUCTIONS:

 
In a bowl pour the dairy-free milk of selection, add the apple cider vinegar, whisk barely and let stand for a number of minutes.

In a small bowl, place the flax seed, and add Three tbsp of water, whisk and let stand for no less than 5 minutes.

Soften the coconut oil if you have not already.

In a big bowl, whisk collectively the buckwheat, rice flour, protein powder, chia seeds, coconut sugar, baking powder and soda, salt, and cinnamon.

When the milk, and flax egg are prepared, add them to the dry substances together with the vanilla, and the oil, and stir till JUST mixed.

Let sit for about 5 minutes.

Within the meantime, warmth the waffle iron to medium warmth, and spray with vegan cooking spray.

When the batter is prepared, scoop a few half a cup at a time of the combination into the waffle iron and prepare dinner for Three-Four minutes relying in your iron.
